It's really tough to recommend a Tama because I don't know what you like or what you are looking for and like you said there are so many versions today. I also can't speak on every single one because I don't have experience with that many. I can tell a bit about:
Tamagotchi Uni: the currently newest version. It is easy to take care of and has (imo) a lot of content for a Tamagotchi like going on walks, crafting and a lot of furniture and accessories. There are DLC but unlike the Tama Smart you don't have to get physical copies of these and can easily download them for a rather cheap price. KuroMametchi unfortunately isn't on it but there's hope he gets to be in a future DLC. The Tamagotchi Uni does not have any gene mixing and the focus isn't on family/generations like the ON. There is a lack of interaction with your Tama. You can give it accessories but can't pet it like in the Smart or the Pix. It also always never beeps, puts itself to bed. Like I said a Tama that is easy to care for, so easy I've had a hard time to not get perfect care characters. There are no jobs or training your Tama just grows into an adult and you can marry it off (or ask it to stay) via the Tamaverse or connecting to another Uni and start over with a new egg. There is a babysitter and it can be turned off. Doesn't need batteries as it is rechargeable via USB-C.
I personally enjoy it especially the feature to take your Tama on a walk. It does have its weaknesses and the Tamaverse (a place you can visit via the wifi functionality of the Uni) isn't as great as it was marketed. Just a fun little place to meet the ghosts of other Tamagotchis, give them a heart, play game in the arena if there is an event, go to travel to another place (it's an animation only and you get a new food item at the end), marry your Tama off or check out new outfits others put together. You cannot meet other Tamagotchis in real-time you cannot give them gifts either. That was a bit disappointing for me personally.
Tamagotchi Connection 2024: I also recommend this one if you really like the P1/P2 but want more gameplay. It offers more content than those and feels like a great "traditional" Tama experience. There are many characters to obtain, more games that get to be unlocked as your Tama grows into an adult, many fun items and cute animations! I don't know anything about the original Connection but this one is also rather easy to take care of imo. The needs don't deplete like crazy. There is of course the Connection feature so you can connect to another to marry and receive a new egg or you wait for the matchmaker. There are also generations in the sense they get counted (Gen1, Gen2 and so on). You can give your Tama a nickname as well. I enjoy the Connection very much!
Tamagotchi Pix/Party: I have yet to play with it myself (my Pix Party is on the way) but the main feature of the Pix is a camera and taking pictures to make food for your Tamagotchi or craft items, I think. It is similar to the Tama Uni as there is no marriage or gene mixing, there is a baby sitter function. You can train your Tama for a job that they get when they are an adult and there are various careers available. Once your Tama is old enough it will go back to Tamagotchi planet or you can keep it similar to the Uni. Pix is a rather big decive (due to the camera) and needs batteries, rechargeable ones at best because they don't seem to last very long especially if you use the camera a lot. It also doesn't have physical buttons but "buttons" that register your touch. They seem to be worse on certain devices and better on others (there are mixed replies to it online). They can make it hard to play certain games. Some say the Pix Party has better battery life and buttons. Speaking of which the only differences between Pix and Pix Party are two raisable characters are different and on the Pix Party you can have parties which provide more minigames. The Pix/Pix Party has KuroMametchi. Gameplay is similar to the Uni, besides the camera feature, but you can pet your Tama which is very cute imo. It does have more games that rotate which sounds great.
These are the devices which are not as expensive (yet) and are good to obtain. There is also the re-release of the Tamagotchi Angel but I can't say anything about it.
The Tamagotchi ON usually goes for crazy prices online as it is not being made anymore. There are even more versions available in Japanese like the Tamagotchi Smart (a small the device like the Uni but with a touch screen), the P's, 4U, ID or IDL (as far as I know very expensive too). Some of them have an English version or can (partially) be patched to English. I recommend watching YT videos about the gameplay and you'll get a good impression. These are all Tamas with a color screen.
