I think so! As long as you don't pay an outrageous price for one, they can be very worth it. I'd recommend going to Ebay for colored tamas because there's normally some good deals there.
- Do they still run on CR2032 Batteries?
Nope. All of the colored tamas run on triple-A batteries.
- How many Colour versions are there and which would you recommend?
I believe there's been about 6 color releases. These would include the Plus color, iD, iD L, P's, 4U/4U+, and M!x (I don't think there's more, but I might be wrong). I'd personally recommend the P's because it has more characters and locations than anything before it. Also, it's happiness bar is easier to raise than any other colored version (the happiness bar is infuriating to fill on the other ones, imo). I've never used a Plus Color or 4U/4U+ though, so I can't say my opinion on these.
Like I mentioned before, Ebay is a great place to buy colored tamas from. Another site I've heard great things about is Japanyouwant.com, but I can't personally vouch for them because I've never bought anything from them.
- Is it crucial to know Japanese to run one? Because I don't speak a word...
Nope! As long as you have a basic understanding of how Tamagotchis work, I don't see you having any problem using one. You do have a couple of options if you really want one in English. First, there's the Tamagotchi iD Le which is an English version of the iD L. However, I don't really recommend this one because it can be glitchy and it's also pretty expensive due to it's rarity. Another option would be to download Mr. Blinky's Tamagotchi P's English patch. Here's Mr. Blinky's official site if you want to look into it

https://mrblinky.net/tama/ps/english/ All you should keep in mind for this is that you do need to have an old phone with infrared or an infrared adapter to plug into your computer. I recommend the old phone route because people seem to have an easier time with it over the adapter. Either one will work, but I've just heard that the phone is better.
EDIT: Added a color version that I forgot about.
